A popular dish in Mauritius is Touffe chouchou.
Chouchou is also known as chayote or christophine. The “touffe” in creole means “cuire à l’étouffé” where the vegetable is cooked with onion, thyme, ginger garlic paste and covered. It is normally cooked on slow flame.
This is yummy for babies as they get amazing taste in this simple dish. It can be served with some white rice or you can also add a non-veg or some lentils.

Instructions
- Cut the chayote in slices after washing properly.
- Prepare thyme, chopped onion and ginger/garlic paste.
- In a pan put some oil, add onion and the thyme. Add the sliced chayote and stir.
- Add the ginger/garlic paste. Cook on slow flame till cooked.
- READY! Can be served with some white rice.
