Today I found myself with a lot of small pieces of vegetables in the fridge and I was wondering what to do! So I remembered this delicious french recipe that I love…RATATOUILLE! Not the cartoon little mouse but this yummy vegetables cooked in tomato gravy with herbs. Super easy..
I added pasta to eat with the ratatouille.

- 1 Potato
- 1 Carrot
- 1 Patisson
- 1 piece Courgette
- 1/2 cup Corn
- 1/2 cup peas
- 1 Onion
- basilic leaves
- 1 cup Tomato puree
- butter
- 1 tsp Ginger/Garlic paste

Instructions
- Prepare your vegetables.
- Cut the vegetables in small cubes.
- In a pan, add some butter and the onions. Let cook some 1 minutes and once the onions become translucent, add some ginger/garlic paste. Let cook for 2-3 minutes.
- Add the cut vegetables to the pan.
- Add some herbs. I've used some basilic herbs but you can go freestyle, you can substitute with herbs provence or origanum herbs.
- Add tomato paste. Let cook till vegetables become soft.
- READY!! You can blend to the consistency that you prefer.
