Many mummies tell me that they have a lot of difficulty feeding vegetables to their kids – here is a super simple recipe with lentils and vegetables (here I added carrots and zucchini). You can add the vegetable that you prefer.
To save time, I often pressure cook a whole packet of lentils and freeze them in small portions. If you are in a rush or sometimes to add to some sides to make a full meal.

- Cooked black lentils
- 1 medium Onion
- 1 Tomato
- 1/2 tsp Ginger/Garlic paste
- Some leaves Spinach (I used frozen)
- Thyme leaves
- Carrot
- Zucchini
- salt

Instructions
- Prepare all your ingredients: a) Pressure cook your lentils or remove from freezer if you have b) Grate your vegetables c) Cut your onions d) Cut your tomato
- In a pan, add some oil and add the onions. Let the onions cook and add thyme. The onions should become transparent.
- Add the chopped tomato. Then add the ginger/garlic paste.
- Add the grated veggies and cooked lentils. Add salt and the spinach. Let all ingredients cook and you are ready to go. Serve with some rice.
