Today we will have typical Mauritian food!! Bouillon cresson (watercress) is what everyone craves for after a trip, parties or too many dinners. This served with plain rice and “rougaille poisson salé” is amazing! Some people like eating same with canned sardines in a salad – chillies – sliced onions and sliced tomatoes.
CHICKEN LIVER

Calories and Protein
Chicken liver is a complete protein because it contains all of the essential amino acids, which are those that your body cannot produce.
Amino Acids
According to the World Health Organization’s recommendations for a 175 lb. adult, one serving of chicken liver provides over 100 percent of the minimum daily requirement for phenylalanine.
Vitamins
One serving supplies more than 100 percent of the DRI for vitamin A and four of the B vitamins — folate, pantothenic acid, riboflavin and B12.
Let’s go for the recipe:

- 1 pk Watercress
- 3 cm Ginger
- 1/2 Onion
- Boiling hot water
- salt to taste
- 2 pieces Chicken Liver
- 1/2 Onion
- Few leaves thyme
- 1 Tomato
- 1 tsp Ginger/Garlic paste

- 1) Clean the watercress and soak in water to remove all residues 2) In a pan, put some oil then add the sliced onions. DO NOT LET BURN. 3) Add boiling hot water - sometimes I use drained water from cooking rice to add richness to the soup. 4) Add ginger cut in julienne 5) Add salt 6) Add the watercress - DO NOT COVER else the leaves will turn yellow. DONE!!!
- 1) Cut the liver in small pieces, marinate with ginger/garlic paste, salt and a little pepper. 2) In a pan, put some oil and add the chopped onions & thyme 3) Add the chicken liver - put on medium flame and let cook 4) Add chopped tomato 5) Put salt and allow to cook. DONE!!
- You can blend to the consistency that you want. This is perfect for babies 🙂
