Prepare your ingredients – chicken, spring onions, cardamon, peppercorn and coriander seeds.
The spices that will be used for poaching your chicken to add flavour.
Also add a piece of peeled ginger.
Put all the ingredients to boil in some water – enough water to cover the chicken.
Vegetables to add to the meal – corn, sweet potato and calebasse (bottle gourd).
You will know that the chicken is poached when it turns completely white. Remove with the help of a strainer the spring onions, cardamon, peppercorn and coriander seeds. Keep the water and the chicken.
In the chicken stock, add the cut vegetables and the chicken. Let simmer on slow flame. Add water if needed and salt.
Your vegetables and poached chicken are ready.
