How many of you like eating Pumpkin (in Mauritian terms: Ziromon)?

I am personally not a fan unless I am having same in a 7-curry meal in an indian wedding. I do not like the mashed texture so in order to set the right example for my little one, I came up with this recipe.

Pumpkin cooked in coconut oil – you will feel you are eating potato curry πŸ™‚

Try it out:

Pumpkin Curry Cooked in Coconut Oil
Ingredients
Instructions
  1. Cut the pumpkin in small pieces.
  2. In a pan, put a tbsp coconut oil. If you do not have coconut oil, use some olive oil.
  3. Put the pumpkin in a single layer. Let it cook for 2 mins then you turn them. Cook for another 2-3 minutes.
  4. Remove the cooked pumpkin and set aside.
  5. In the same pan, add some oil - onion - tomato paste - ginger/garlic paste - salt. Let the mixture cook. You can at this stage add the cumin powder if you are using.
  6. Add the pumpkin ensuring the pieces do not break.
  7. Garnish with coriander leaves.

Lentils & Veggies – Kids gravy http://eatvy.com/recipe/lentils-veggies-kids-gravy/ http://eatvy.com/recipe/lentils-veggies-kids-gravy/#respond Fri, 19 Oct 2018 11:22:24 +0000 http://eatvy.com/?post_type=recipe&p=1718

Many mummies tell me that they have a lot of difficulty feeding vegetables to their kids – here is a super simple recipe with lentils and vegetables (here I added carrots and zucchini). You can add the vegetable that you prefer.

To save time, I often pressure cook a whole packet of lentils and freeze them in small portions. If you are in a rush or sometimes to add to some sides to make a full meal.

Let’s see the recipe:

Lentils & Veggies - Kids gravy
Ingredients
Instructions
  1. Prepare all your ingredients: a) Pressure cook your lentils or remove from freezer if you have b) Grate your vegetables c) Cut your onions d) Cut your tomato
  2. In a pan, add some oil and add the onions. Let the onions cook and add thyme. The onions should become transparent.
  3. Add the chopped tomato. Then add the ginger/garlic paste.
  4. Add the grated veggies and cooked lentils. Add salt and the spinach. Let all ingredients cook and you are ready to go. Serve with some rice.

Kids Bouillon Cresson & Chicken liver http://eatvy.com/recipe/kids-bouillon-cresson-chicken-liver/ http://eatvy.com/recipe/kids-bouillon-cresson-chicken-liver/#comments Mon, 03 Sep 2018 12:57:06 +0000 http://eatvy.com/?post_type=recipe&p=1649

Hello mummies and daddies…

Today we will have typical Mauritian food!! Bouillon cresson (watercress) is what everyone craves for after a trip, parties or too many dinners. This served with plain rice and β€œrougaille poisson salé” is amazing! Some people like eating same with canned sardines in a salad – chillies – sliced onions and sliced tomatoes.

CHICKEN LIVER

This might not be the most attractive thing when you think about it but once cooked, it will look like minced meat and full of nutrients. Check LIVESTRONG article:

Calories and Protein

Chicken liver is a complete protein because it contains all of the essential amino acids, which are those that your body cannot produce.

Amino Acids

According to the World Health Organization’s recommendations for a 175 lb. adult, one serving of chicken liver provides over 100 percent of the minimum daily requirement for phenylalanine.

Vitamins

One serving supplies more than 100 percent of the DRI for vitamin A and four of the B vitamins β€” folate, pantothenic acid, riboflavin and B12.

Let’s go for the recipe:

Did you ever think of making soup with the main ingredient being potato?

Let me tell you that it’s absolutely yummy – it tastes like dal!!!! I promise you that you will love it. I do this dish at home and thought I’ll give it a try with my toddler. I start getting bored with only dal, lentils, greens soup etc… so to bring some variety, check this recipe:

I have used a mixed roasted spices that I call β€œkarisiyon”, I do not know if it is the correct name but it is a mix of anise seeds, mustard, methi seeds and some urad dal. I bought mine from the market but if you do not have it, you can simply use methi seeds (fenugreek seeds)

Mauritian Style Potato Soup - Kids Version

  4. Add the potato cut in circles.
  5. Let cook for 2 minutes.
  6. Add boiling water enough to cover the potatoes. Allow to cook for 10 minutes on low flame.

Did you ever think of giving masala curry to your kids! I give my 11 month old baby some masala and she just loves the taste πŸ™‚ I often see parents struggling to cook for their kids as they have to cook their own meal plus one for the kids. The perfect would be to do something that will cater for everyone in the family.

It is best to give your kids the habit of eating some spices because it will develop their palates to homemade food in the future and be able to join you at your dining table. Plus spices are known to have a lot of health benefits for kids.

I bought masala curry powder without chilli; this is the one i’m using below. I started with half teaspoon masala powder and instantly her eating plate was empty πŸ™‚

Try this recipe and let me know how your kids react to it πŸ™‚

Cook on budget – How to freeze chicken fillets? http://eatvy.com/2018/07/06/cook-on-budget-how-to-freeze-chicken-fillets/ Fri, 06 Jul 2018 08:30:35 +0000 http://eatvy.com/?p=1579

I know many parents buying premade food for their kids, please do not it unless you have no choice. I do believe that premade food can be used in emergency cases when you do not have time to prepare a meal. For me, it is also super important to make your kids taste the food that you will be having – the taste of your homefood, the spices of your country.

You will help yourself by doing this because your kids will eat wherever they go and not look for specific food. So i personally believe that it is important to give the biggest variety of food to your kids.

Today I will show you how to optimise your purchase for your baby or toddler. I bought chicken fillets for Rs 176.95 (about US $5) and I got 12 small filets ideal to add to a meal. This is about Rs 14 a piece of chicken about US $0.40 ! This is super cheap considering the price you pay for premade food.

Here is a small video that can help you in freezing the fillets. I make 3 packs of 4 pieces that are easy to unfreeze (by breaking them one by one):

Voila…super simple and time saving !!

See you soon for more tips.
